Bread from the BBQ? Yes, cooking over fire as they did hundreds of years ago. Only then on the “modern” kamado bbq. Is that good? What do you think ;-)

10 gr Cream Butter
7 gr Dry yeast
1 hand Coarse sea salt
1 dash Olive Oil
150 ml Lukewarm water
1 stk A BBQ with indirect setup, heated to 200 ~ 220 degrees
1 stk Large bowl or dish
2 stk Tea towels
1 stk Brush for the olive oil
- Ingredients Herb Butter
250 gr Cream butter (unsalted)
1 st Various green herbs (parsley, chives, etc)
1 dash Olive Oil
1 pinch of Salt
1 pinch of Pepper
1 toe Garlic
1 stk Food processor for grinding
- Ingredients Tapenade
1 part Black olives
1 part Green olives
1 dash Olive Oil
1 piece Arugula
Intructions Bread
- In a bowl, mix water with yeast
- Add the flour, salt and creamed butter
- Roll up your sleeves; time for kneading. Knead a nice ball that no longer sticks
- Now cover the bowl with the ball and set in a warm place for an hour (in the meantime, proceed to the butter or tapenade). The dough will now rise until it has doubled in size.
- Now shape the dough into two nice rolls, spread them with olive oil and sprinkle with coarse sea salt
- Cover the bowl again (with a clean cloth) and let rise again
- Place the rolls on the BBQ and bake for about 45 min until done
- Instructions Herb Butter
- Let the butter come to room temperature
- Put the butter along with all the other ingredients in a food processor and blend well. You decide the flavor of the butter, start minimal and add ingredients to taste so you donu0027t overkill on any one ingredient.
- You can serve the butter immediately; you can also choose to let it harden a bit in the refrigerator.
- Instructions Tapenade
- Put all your ingredients in a food processor and grind everything thoroughly. Do not do this for too long to keep nice coarse pieces in the tapenade.
Notities
- For this recipe, we used our Grill Bill Pro XL kamado bbq. But of course this can also be prepared on one of our other kamados, all of which are equipped with a heat deflector. (*except for the Small kamados)
