If you go to a BBQ contest, chicken wings are often a part of the competition, and different aspects of preparation, such as flavor, texture and presentation, are looked at. You can see that participants try to set themselves apart by using unique spices and sauces, and they look at the quality of the chicken wings and how well they are cooked.

Sometimes BBQ competitions set up special rules, such as a certain sauce or spice mix that must be used on a mandatory basis. So preparing chicken wings at a BBQ competition requires not only cooking skills, but also creativity and the ability to optimize the flavor and texture of the dish within the competition rules.

This simple but super tasty recipe introduces you to a simple layering technique, which allows you to incrementally apply different layers of flavor to the wings. From savory, sweet, sour and a hint of smoke. Everything is there, even the taste of tequila!

The comeback PitGrit Rub you could optionally use. This rub is the base layer, which provides an extra layer of flavor, and ensures that the wings get nice and tender.

BBQ Mode

  • 4 st Chickenwings, preferably free-range chicken

  • 1 el Comeback PitGrit – Pit Ou0027Heaven

  • 3 el Fin & Feather Citrus – Big Jimu0027s

  • 4 el Tequila Lime BBQ & Wings Sauce

  • 1 hand Cherry smoking wood


  • Light the bbq, and go to a tempt of 190/200gr
  • Pat the wings dry and sprinkle a thin layer of comeback PitGrit on both sides over the wings and let soak for 15 min. You can see the wings start to sweat after a few minutes.
  • Now sprinkle a generous layer of Fin & Feather Citrus over the wings and press well
  • When the bbq is up to temperature you can put the wings on the indirect part on the grillchicken wings bbq recipe
  • Now sprinkle a handful of cherry smokewood dry into the charcoal. This will give you instant good smoke
  • At a core temperature of 65 degrees, you are going to coat the wings with our Tequila Lime BBQ & Wings Sauce, which pairs perfectly with Big Jimu0027s – Fin & Feather Citrus
  • Now let the sauce caramelize and crisp up; the wings are done at a core temperature of 74 degrees. Donu0027t you have a crust yet? Then itu0027s best to leave the wings for a few more minutes
  • Ready? Serve the wings as a snack, or together with fries. And you can even use the lacquer as sauce on the side. Enjoy!



  • Couldnu0027t find any wings? Then of course you can just use drumsticks, these need to be a little meatier, and need to cook a little longer. But will be just as tasty!
